Developed by the passionate minds at Project Optimist, Covalle Tomato-Water Gin is the result of a deep-rooted fascination—and a lifelong love—for the essence of peak-season tomatoes. But it’s not just the fruit itself that inspired them. It’s also that elusive, golden nectar that lingers at the bottom of the bowl after you’ve savored a perfectly ripe tomato salad.
Capturing that fresh, herbal, and luxuriously savory quality in a gin was no small feat. In fact, they quickly discovered that simply adding tomatoes to alcohol actually cooks the delicate flavors right out of them (like a ceviche). The result was a tomato-sauce gin and not the experience of smelling tomatoes on the vine. This wouldn’t do.
Undeterred, the Project Optimist team dove into rounds of experimentation, embracing trial and error with determination. They sought advice from amaro makers, vermouth producers, and some of the world’s leading gin experts. Eventually, they discovered a solution far more captivating and modern than they had originally imagined.
Through a meticulous, multi-step process—including mortar-and-pestle-like extraction, centrifugation, and careful maceration—they found a way to bottle the spirit of late summer using the aromatic, oil-rich fresh stems and leaves of tomatoes.
The result is Covalle Tomato-Water Gin: a unique expression of their obsession with capturing fleeting flavors. Now, we're on a mission to share this seasonal magic with the world.
