XO Calvados

This is an XO Calvados. There's no gimmick to the branding or naming; we've simply called it what it's legally defined as. But more important than what's on the outside of the bottle is the liquid within. Every distillate starts with a base product, and no base product carries more vintage variation, more grower character, more fermentation strategy, more distillation philosophy, and more environmental nuance than high-quality fruit. Anything worth loving in a spirit becomes more interesting and more singular when that spirit began as truly delicious fruit. Therefore: All Discerning Palates Will Eventually Find Fruit.

This Calvados has lived in four places. It was distilled by multiple producers in Normandy in 2014, and the mixed-producer blend rested there until 2024, when the 250-gallon tote was shipped to America to help condition barrels for a whiskey R&D project. During its time in the US, the Calvados traveled to upstate New York, then the Midwest, and finally to Brooklyn for bottling. It spent roughly six months fully separated into ex-bourbon barrels before being re-blended, freeing those barrels up for aging rye and bourbon. Then, one-fifth of it rested for a year in a char-2, thirty-six-month-cured virgin oak barrel to assist with another whiskey blending project.

Through all that barreling and re-barreling, it became clear this liquid was something remarkable. It even gained proof in a way no Calvados would in Normandy. Friends tasting this little side project were amazed, and it was decided that something this good simply had to be bottled and shared.

The final twist of fate that sealed this project's future: it turns out Calvados, strangely, doesn't need to be bottled in France. So here we are, with roughly 1,000 bottles of XO Calvados that might be the most obscure item in the Small Victories portfolio. To whoever ends up with a bottle: please drink it. It wasn't made to sit on a shelf.
